There is only 14 more sleep until Christmas and I cannot wait! Christmas is, without a doubt, one of my favourite times of the year and I love doing anything possible to get into the festive spirit. One of my favourite things about Christmas is curling up on the sofa with a blanket, a good film, and a little treat. (And spending time with my family of course).
Over the last year, I’ve become a little bit of a fitness freak and I’ve really started to care about the food I put in my body, and though I can binge on chocolate and pizza with the best of them, overall I like to be healthy. So, I decided to bake some delicious and healthy mince pie bites which means I can have a little treat but not feel too guilty about it, win-win right?

As I felt this recipe was going to be very sweet I decided to create ‘bites’ instead of a standard mince pie size. The recipe was really easy and I was surprised how quick it was to make them and how good they tasted. Though these bites tasted amazing it is easy to spot the difference between these mince pies to regularly mince pies – the lack of butter is unmistakeable but I have seen recipes using soy butter which might be a great substitute. Though the lack of butter means these bites are lighter and it’s easy to enjoy a couple without feeling full or overwhelmed.
I allowed the bites to cool slightly (as I wanted to enjoy them warm) The pastry was really sweet and moist and the mince inside was juicy and the orange juice added a pitch of citrus which finished off the recipe really well. I ate mine with a glass of almond milk but I bet they would be great with mulled wine or a hot chocolate too.
